Papadom is a thin Indian wafer.
It is typically made from lentil or chickpea flour.
Salt and peanut oil are added to make
dough, which can be flavored with seasonings such as chili, cumin, garlic or
black pepper. The dough is shaped into a thin, round flat bread and dried.
It is cooked by deep-frying for just a few seconds, roasting over an open
flame, or toasting.
Naan
is a round flatbread made of white flour. Naan
is a staple accompaniment to hot meals in India.
Raita
is a condiment based on yogurt and used as a sauce or dip. The yogurt is
seasoned with cilantro, cumin, mint and other herbs and spices. Vegetables such
as cucumber and onions are mixed in. The mixture is served chilled.
Raita has a cooling effect on the palate
which makes it a good foil for spicy Indian dishes.
Rogan Josh
is an aromatic curry dish. Rogan means clarified butter in while Josh means hot
or passionate. Rogan Josh thus means meat
cooked in clarified butter at intense heat.
Recipes vary widely across different regions, but all include lamb and a
mixture of spices. These may include paprika for its red color, aniseed, cloves,
cumin, and some use tomatoes.
Baingan ka Bharta,
seasoned roast eggplant, is a healthy dish – eggplant, the main ingredient, is
low in fat and sodium and high in dietary fiber, vitamins C and B6, magnesium,
phosphorus and potassium. Add to that the tomatoes, green chilies and onion and
you've packed a mighty nutritional punch in one single dish!
